INGREDIENTS
1 kg of plain flour
250g of unsalted butter
65g of baking powder
550ml of milk
1 diced red pepper
1 diced green pepper
1 diced yellow pepper
1 bunch of spring onions
1 cup of grated red cheddar cheese
1 cup of diced salami
0.5 cup of grated Parmesan cheese
2 heaped teaspoons of Cajun spice
METHOD
1) Rub in butter, flour and baking powder
2) Add in the spring onions, diced peppers, cheeses and Cajun spice
3) Add milk and mix to form a dough. Do not knead the mix
4) On a floured surface, press dough mixture flat by hand to a uniform level of approx. 4cm to 5 cm high
5) Cut to desired size and shape and brush top with eggwash
6) Place in a pre-heated oven at 180c, checking periodically until golden brown (approx. 25 to 35 minutes)
